Cherrycoco

Okay, so this is not for the dieters, but that’s just the way it is in life.
Ingredients:
400 g (2 cups) cherries, pitted
400 ml (14 fl oz) coconut milk
2 teaspoons caster (superfine) sugar
1 teaspoon natural vanilla extract (essence)
ice cubes, to serve

Method:
Juice the cherries through a juice extractor. Mix well with the coconut milk, sugar and vanilla. Serve over ice. Make 2 small glasses.

Note: You could use vanilla sugar in this recipe – just keep a vanilla bean in a jar of sugar for fragrant sugar.
