Tamarind cooler

Mouth-puckeringly tart when consumed straight, a shot of sugar makes tamarind lip-smackingly good.
Ingredients:
2 teaspoons tamarind concentrate
3 tablespoons caster (superfine) sugar
20 g (1 cup) mint leaves
12 large ice cubes

Method:
Blend the tamarind, sugar, mint, ice cubes and 250 ml (1 cup) water in a blender until smooth. Make 2 medium glasses.
